BLOG, Places to Eat in Provo

Waffle Love in Provo Utah

By Katerina Gasset

If you have not been to Waffle Love in Provo, Utah, you are missing out!

This is one of our favorite places to eat! Not so healthy but, well, I like to splurge once every few months.

There are two locations in Provo. One is on State Street and one is at Shops at Riverwoods. So whether you live on the east bench of Provo or in town, there is a Waffle Love near you :).

We go to both locations.

But there is something so nostalgic about the Waffle Love location on State Street in Provo. Iconic and energetic. Love this place!

How Waffle Love in Provo Started

This is a photo of the sign board at Waffle Love at the Shops at Riverwoods. Image by Katerina Gasset, licensed Realtor and restaurant reviewer in Provo Utah...

It all began with Adam Terry, a motivated father who has a burning passion to pursue his dream and provide for his family. After losing his banking job, Adam hustled and tried out all sorts of odd jobs to make ends meet.

But he had a brilliant idea to turn a closed-down restaurant into a Belgian waffle shop. The only problem? He didn’t have any money. Adam didn’t let that stop him.

He decided to become the first food truck in Utah County instead.

Melissa, his wife, was hesitant at first. But she saw the fire in Adam’s eyes and joined him wholeheartedly.

The couple took a $5,000 loan from Melissa’s grandmother. Together with some good credit, they started building Waffle Love.

Their food truck began as a mere $1,300, but Adam and Melissa had big plans. Melissa designed the truck, painted it, and got their marketing game on point.

They even imported waffle irons from Belgium to ensure the authenticity of their delicious waffles. Talk about dedication!

Provo didn’t have specific regulations for food trucks back then. So, Adam worked closely with city employees to make sure everything was legal. They wanted to do things the right way from the beginning.

In July 2012, Waffle Love had its grand opening at the Springville Art City Day’s farmers market. Adam had set a goal of selling 100 waffles a day to break even. But let me tell you, it wasn’t easy.

They struggled to consistently reach that goal. He had to get creative and find new places to park his truck. Believe it or not, he even had the police called on him a few times!

But he never lost hope.

In those tough moments, Adam turned to his faith as a Christian for strength. He found comfort and inspiration in the Bible verse that says, “I can do all things through Christ, who strengthens me” (Philippians 4:13).

He repeated those words to himself countless times, reminding himself that he could overcome any obstacle.

Adam did overcome every obstacle –Waffle Love has become a huge success.

Today, Waffle Love has two restaurant locations in Provo and more in other parts of the country, along with the food truck that started it all!

Moreover, the menu features unique sweet and savory waffle recipes that you can’t resist.

What I love about Waffle love is not only do they serve mouthwatering waffles, but they also have an incredible story behind this fantastic food truck. It’s proof that dreams do come true!

Make sure to stop by Waffle Love. Trust me, you won’t regret it!

About the author of Move to Provo Utah Website

Katerina Gasset

When I moved here I was blessed to have my daughter to help with different things you need to know when you move to a new place. I had background from living here before but things have changed a lot too since the '80s.

We were able to get all the good places to eat down fast - since she knows all that and we have a lot of the same likes in food. But things like how to turn on my electricity or what power company services my home... well... I was at a total loss!

I know that other people moving to Provo don't always have family here to guide and help them. And most people don't have a real estate agent who gives them a welcome package on all the important numbers and places they need to know.

My goal is for this website to be your go to resource for everything you need to know before, during, and after you move here to Provo, Utah. I want you to have the best experience and love living here as much as I do
